Spring is Here!

Kevin: And I am inside playing with Lego. Hopefully as the weather improves, I’ll be able to get out there and shoot more outdoor stuff.

Kevin: I’m on a real Lego kick right now. Add to that having re watched Star Wars last weekend, I decided to add to my Lego Collection a nice Star Wars set. I got the Tantive IV (set 10198).

Chi: Myself I’m a K’nex kid.  I loved them and still do.

Kevin: we went to Washington DC for the long weekend. Here is What DC Chinatown looks like.

Chi: We went everywhere!  Here’s a shot of Georgetown.  Kind of reminds me of the Distillery District in Toronto.

Foodies

Kevin: I love good food. If you you have been following this blog you’d know that.  I also love trying new recipes,  this week it was Tomato Cup Eggs. Basically its a hollowed tomato with an egg and cheese inside. Definitely a nice start to the morning.

Recipe to serve 2:
2 tomatos
2 eggs
Grated cheese of your choice. I like oaxaca for its stringy texture, and adding the sharpness of something like an asiago cheese.
Sea salt and freshly pepper
1. Preheat oven to 425 degerees or ~220 degrees celesius
2. Cut the top off the tomatoes and hollow it out, removing the seeds
3. Place tomatoes into oven safe glass or ceramic container, season tomatoes with sea salt and peppers
4. Crack in the eggs, one for each tomato
5. Bake for 15 minutes or until eggs for mostly cooked through
6. Top with cheese and continue in the over for another 5-7 minutes or until cheese is bubbly
Serve with buttered toast slices

Adventurous

Kevin: Superbowl!!!!! My money was on the Giants. But other then chicken wings I was tasked to fix Chi’s Nintendo DSI.

Chi: This weekend I went with a friend to try out biking at an indoor park.  I learned how to use the pump tracks, zoom around the XC track, and launch myself into the foam pit in the vert area.  Can’t wait to get outside in the summer and do it all again!

Kevin: The Battlestation. Not much to write about today so here is a ancedote about the titles of the post if you hadn’t notice (don’t feel bad, they arent’ very well thought out). Since returning to this blog I’ve poorly attempted to be clever and made the first three post titles refernces to the Original Star Wars trilogy.

Kevin: We went skating on Saturday night,in the middle of it starting to snow, hard. Ten minutes of the hardest snow fall I’ve seen this year.

A New Photo

In a time long ago in far away time I forgot to continue to update this blog. School and exams came then went, likewise with the holidays(photos were taken but unsure if I will post them as yet). The general chaos of life distracted from posting, but I am ready to start again.

The first photo is inspired by my foodie tendencies. I love trying new food and finding new unique and delicious food has become a hobby. Japadogs are found in Vancouver and are Japanese cuisine inspired hotdogs. I don’t in Vancouver, so I had to make own. The key element of Japadogs for me was the Japanese mayo, it is sweeter then american mayo.
Here are the ingredients if you are so inclined:

Homemade Japanese mayo
2 egg yolk
Corn oil or any unflavoured oil (not olive oil)
Rice vinegar
Yuzu juice
Kosher salt
Ground black pepper

Spread on the toasted bun, top with some nori, fry dogs in sesame oil. And you got a decent Japadogs. I also made a Korean inspired kimchi and avocado spread that was out of this world.

There has been a short hiatus on our end due to insanely busy schedules, but now we’re back.  Last Friday marked Remembrance Day in Canada.  Much respect to the past veterans and current people in uniform.

One of my buddies in the force recently graduated from his courses so a few of us did the 3 hour trek up to see him.  We’re so proud 🙂  Up in the corner is the most awesome painting of the Vimy Ridge memorial.  It reminds us of how awesomely epic the Canadian forces were in WWI.  The British used to think we were crazy and used the Canadians as shock troops to scare the crap out of the enemy.  Rock on.

Kev: Happy Turkey Day!
Had a huge Thanksgiving feast with friends last night, but I forgot my camera. However, this morning was welcome with some pumpkin cheesecake and caramel glazed pecans.

Chi/Thanksgiving!

Chi: On my end we held a small candlelight vigil before marching off in a community parade for Oktoberfest.  Happy Thanksgiving again!
